Lactic acid fermentation - when a muscle doesn't get enough oxygen (either poor circulation or it's working harder than blood can get it oxygen), the muscle goes into anaerobic respiration: burning energy without oxygen. The product of this is lactic acid. The soreness of muscles after a workout is due to lactic acid buildup. Once oxygen gets into the area, the lactic acid is broken down to further metabolic products.
